  • 2/3 cup peanut butter
  • 1 1/2 Tbsp honey (or more to taste)
  • 2 Tbsp shredded coconut
  • 1/4 cup walnuts, chopped
  • 1 Tbsp sunflower seeds
  • 2 Tbsp dark chocolate, chopped
  • 1/2 tsp coconut oil

Instructions

  1. In a mixing bowl, combine 1 cup of oats with 2/3 cup peanut butter and 1 1/2 tablespoons honey. Mix until smooth.
  2. Add in 1/4 cup chopped walnuts, 1 tablespoon sunflower seeds, and 2 tablespoons shredded coconut. Stir well to combine.
  3. Shape the mixture into cookies or patties using about 1 1/2 tablespoons per piece. Place them on a parchment-lined baking sheet.
  4. Melt 2 tablespoons of dark chocolate with 1/2 teaspoon coconut oil in the microwave (15-30 seconds). Stir until smooth.
  5. Drizzle melted chocolate over the cookies for added flavor.
  6. Refrigerate for at least one hour before serving.
