  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • Boiling water (for the water bath)
  • Salted caramel sauce

Instructions

  1. Preheat oven to 350°F (180°C). Wrap a 9-inch springform pan in tin foil to prevent leaks.
  2. Combine graham crumbs, brown sugar, cinnamon, and melted butter; press into the pan for the crust.
  3. Prepare the apple filling by peeling and slicing apples; mix with brown sugar and cinnamon.
  4. For the cheesecake filling, mix cream cheese until smooth; add sugars, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until just combined.
  5. Layer the apple filling on top of the crust, followed by the cheesecake mixture.
  6. Bake in a water bath for about 60 minutes or until set. Let cool before refrigerating for at least four hours.
