  • 1 ½ cups (187.5 g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon kosher salt
  • ¾ cup (170 g) unsalted butter
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup (122.5 g) whole milk
  • 2 ounces cream cheese
  • ½ cup (100 g) granulated sugar
  • 2 cups (476 g) heavy cream
  • ½ teaspoon vanilla extract
  • 1 pinch kosher salt

Instructions

  1. Prepare the apple filling by cooking diced apples, sugar, lemon juice, cinnamon, salt, and flour in butter until tender.
  2. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  3. Mix dry ingredients in one bowl; cream butter and sugar in another. Combine them while adding eggs and milk alternately.
  4. Fill each liner halfway with batter, add a spoonful of apple filling, then top off with more batter.
  5. Bake for 20-25 minutes until a toothpick comes out clean. Cool completely before frosting with whipped cream.
