  • ¼ cup maple syrup (or brown sugar)
  • ¼ cup coconut aminos (or soy sauce)
  • 2 tsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 2 cloves garlic (minced)
  • 2 tsp grated fresh ginger
  • 1 medium red bell pepper (diced)
  • ½ cup shredded carrots
  • Boston Bibb lettuce leaves

Instructions

  1. In a measuring cup, whisk together maple syrup, coconut aminos, rice vinegar, sesame oil, and optional red pepper flakes. Add arrowroot powder and mix until smooth.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, about 5 minutes.
  3. Stir in minced garlic and grated ginger; cook until fragrant, about 2 minutes.
  4. Mix in diced bell pepper and shredded carrots; cook for another 3-4 minutes until tender-crisp.
  5. Pour the prepared sauce over the beef mixture and simmer for 2-3 minutes. Season to taste with salt and pepper.
  6. Stir in sliced green onions before serving.
  7. Spoon filling into Boston Bibb lettuce leaves and garnish with sesame seeds.
