Ingredients
- 2.5 kg (5 lb) bone-in standing rib roast
- 150g (10 tbsp) unsalted butter, softened
- 5 garlic cloves, minced
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh thyme, chopped
- Salt and pepper to taste
- 1 onion, quartered
- 1 head of garlic, halved
- Fresh herbs (thyme and rosemary) for aromatics
Instructions
- Preheat oven to 325°F (160°C).
- In a bowl, mix softened butter with minced garlic, rosemary, thyme, salt, and pepper.
- Generously rub the herb butter over the entire roast.
- Place quartered onion and halved garlic in the roasting pan as a base.
- Position the seasoned roast on top of the aromatics.
- Insert a meat thermometer into the thickest part of the meat and roast for about two hours or until desired doneness is reached.
- Let rest for at least 20 minutes before carving.
