  • 2.5 kg (5 lb) bone-in standing rib roast
  • 150g (10 tbsp) unsalted butter, softened
  • 5 garlic cloves, minced
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 1 onion, quartered
  • 1 head of garlic, halved
  • Fresh herbs (thyme and rosemary) for aromatics

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a bowl, mix softened butter with minced garlic, rosemary, thyme, salt, and pepper.
  3. Generously rub the herb butter over the entire roast.
  4. Place quartered onion and halved garlic in the roasting pan as a base.
  5. Position the seasoned roast on top of the aromatics.
  6. Insert a meat thermometer into the thickest part of the meat and roast for about two hours or until desired doneness is reached.
  7. Let rest for at least 20 minutes before carving.
