Description

Biscoff Loaf Cake is an indulgent treat that combines the irresistible flavors of Biscoff spread with a creamy buttercream frosting. Perfect for any occasion, this cake features a moist texture and delightful taste that will impress family and friends alike.


Ingredients

  • 200 g unsalted butter
  • 200 g light brown soft sugar
  • 4 large eggs
  • 100 g Biscoff spread
  • 200 g self-raising flour
  • 125 g unsalted butter (for buttercream)
  • 250 g icing sugar
  • 165 g Biscoff spread (for buttercream)
  • milk as needed
  • 9 Lotus Biscoff biscuits (for decoration)

Instructions

  1. Preheat oven to 160C Fan/180C/350F/Gas Mark 4. Grease and line a 2lb loaf tin.
  2. In a mixing bowl, cream together butter, Biscoff spread, and sugar until fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Gently fold in self-raising flour until just combined.
  5. Pour batter into the prepared tin and bake for 1 hour 15 minutes or until a skewer comes out clean.
  6. Allow to cool before making the buttercream by creaming together butter and icing sugar, then mix in Biscoff spread and milk for desired consistency.
  7. Frost the cooled cake and decorate with Lotus biscuits.
