Ingredients

  • 1 cup white onions (chopped)
  • 1 clove garlic (finely diced)
  • 3 heaping cups broccoli (finely chopped)
  • 1 1/2 heaping cups julienned carrots
  • 1/4 cup vegan butter
  • 3 cups vegetable broth
  • 4 cups rice milk (plain, unsweetened)
  • 1/2 cup all-purpose flour
  • 1 cup vegan cheddar cheese
  • Salt & pepper to taste

Instructions

  1. Melt the vegan butter in a large pot over medium heat.
  2. Sauté the onions and garlic until translucent, about 5-7 minutes.
  3. Stir in the flour to create a roux.
  4. Gradually whisk in vegetable broth and rice milk until smooth.
  5. Bring the mixture to a boil, then reduce heat and add broccoli and carrots. Cook for about 10 minutes or until tender.
  6. Stir in the vegan cheddar cheese until melted.
  7. Blend part of the soup for creaminess, then return it to the pot and season with salt and pepper.
