Ingredients

Scale
  • 1 1/4 cups (282 g) unsalted butter
  • 2 cups (190 g) old fashioned oats
  • 2 cups, plus 4 tablespoons (280 g) all-purpose flour, spooned and leveled
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 1/2 teaspoons salt
  • 1 cup (200 g) light brown sugar, packed
  • 1 cup (200 g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla
  • 2 tablespoons molasses (not blackstrap)
  • 2 cups powdered sugar, sifted
  • 3 tablespoons milk or heavy cream
  • 1/4 teaspoon vanilla

Instructions

  1. Brown the butter in a saucepan over medium heat until golden brown with a nutty aroma; let cool slightly.
  2. In a mixing bowl, combine oats, flour, baking soda, cinnamon, nutmeg, and salt. In another bowl, mix brown sugar, granulated sugar, eggs, vanilla, and molasses until combined.
  3. Slowly add cooled brown butter to the sugar mixture while whisking. Gradually mix in dry ingredients until just combined.
  4. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Scoop tablespoon-sized portions onto the prepared sheet about 2 inches apart and bake for 10 minutes until edges are golden but centers remain soft.
  6. For icing: whisk powdered sugar with milk and vanilla until smooth; drizzle over cooled cookies.
