  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded carrots
  • For Topping: 4 ounces cream cheese
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 3/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 8×8 baking pan with non-stick spray or parchment paper.
  2. In a mixing bowl, combine melted butter and brown sugar until smooth. Add the egg and vanilla; whisk until fully mixed.
  3. Stir in flour, cinnamon, baking powder, and salt until just combined. Gently fold in shredded carrots.
  4. Pour the batter into the prepared pan and bake for about 40 minutes or until a toothpick comes out clean.
  5. For the cream cheese topping, beat cream cheese and granulated sugar until smooth. Mix in egg yolk and vanilla.
  6. Spread the cream cheese mixture over the slightly cooled bars and bake for an additional 10 minutes. Allow to cool completely before cutting into squares.
