- 1/2 cup melted butter
- 1 cup packed light brown sugar

- 1 tablespoon vanilla extract

- 1 cup shredded carrots
- For Topping: 4 ounces cream cheese
- 1/4 cup granulated sugar
- 1 large egg yolk
- 3/4 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 baking pan with non-stick spray or parchment paper.
- In a mixing bowl, combine melted butter and brown sugar until smooth. Add the egg and vanilla; whisk until fully mixed.
- Stir in flour, cinnamon, baking powder, and salt until just combined. Gently fold in shredded carrots.
- Pour the batter into the prepared pan and bake for about 40 minutes or until a toothpick comes out clean.
- For the cream cheese topping, beat cream cheese and granulated sugar until smooth. Mix in egg yolk and vanilla.
