Ingredients
- 1/2 cup certified gluten-free oats
- 1/2 cup almond milk
- 1 tsp chia seeds
- 1/2 scoop vanilla protein powder
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- 2 tbsp shredded carrots
- 1 tbsp chopped pecans
- 1 tbsp raisins
- 1/3 cup Greek yogurt
- 2 tbsp white chocolate chips
- 1.5 tbsp cream cheese
Instructions
- In a bowl or jar, combine all oat ingredients (oats, almond milk, chia seeds, protein powder, cinnamon, nutmeg, shredded carrots, chopped pecans, and raisins). Stir well.
- Refrigerate for at least one hour or ideally overnight.
- For the cream cheese ganache, melt white chocolate in a microwave-safe bowl and mix with Greek yogurt and cream cheese until smooth.
- Pour the ganache over the oat mixture and return it to the fridge overnight.
- Serve topped with additional shredded carrots and nuts if desired.
