  • ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon

  • 3 large eggs
  • ¾ cup granulated sugar
  • 2 Tbsp oil (canola or vegetable)
  • 1 tsp vanilla extract
  • 2 cups shredded carrots
  • 8 oz cream cheese (cold)
  • 8 Tbsp butter (room temperature)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F. Line a jelly roll pan with parchment paper.
  2. In one bowl, mix flour, baking powder, baking soda, salt, and spices. Set aside.
  3. In another bowl, whisk eggs and mix in sugar, oil, and vanilla until combined. Gradually add dry ingredients; fold in shredded carrots.
  4. Spread batter evenly in the pan and bake for about 10–13 minutes until springy.
  5. Roll the cake while warm in parchment paper; cool for about 10 minutes.
  6. For the frosting, beat cream cheese until smooth; gradually mix in room temperature butter and then powdered sugar and vanilla.
  7. Unroll the cooled cake; spread frosting (leaving an inch on one end). Re-roll tightly and chill for at least an hour before slicing.
