  • 1 medium yellow onion (chopped)
  • 2 ears corn (kernels cut from cobs)
  • 2 cups grape tomatoes
  • 2 medium zucchini (sliced)
  • 3 garlic cloves (minced)
  • 1 1/4 cups marinara sauce
  • 1/2 cup finely shredded parmesan cheese (divided)
  • Fresh basil and parsley (chopped)

Instructions

  1. Boil the tortellini in salted water for one minute less than package directions.
  2. In a skillet, heat olive oil over medium-high heat and sauté onion until translucent.
  3. Add corn kernels; sauté for another two minutes.
  4. Incorporate grape tomatoes; cook until softened.
  5. Stir in zucchini and garlic; sauté until veggies are tender.
  6. Drain tortellini (reserve some pasta water) and add to skillet with marinara sauce.
  7. Toss gently to combine; adjust sauce consistency with reserved pasta water if needed.
