  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel tomatoes
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese (any variety)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion; cook until beef is browned and onions are translucent (8-10 minutes). Drain grease.
  2. Stir in garlic and taco seasoning; cook for an additional 30 seconds until fragrant.
  3. Add beef broth, Rotel, and tomato paste; bring to a boil.
  4. Stir in uncooked rice; return to a boil.
  5. Cover skillet with a lid, reduce heat to medium-low, and simmer for about 15 minutes or until rice is tender.
  6. Sprinkle cheese over the top; cover and cook for another 5 minutes until melted. Serve with desired toppings.
