Instructions

  1. Prepare the vinaigrette by whisking together olive oil, balsamic vinegar, minced garlic, honey, salt, and pepper in a mixing bowl or mason jar.
  2. Season the chicken with salt and pepper, then grill over high heat for about 6-8 minutes per side until the internal temperature reaches 165°F. Let rest before slicing.
  3. In a large bowl, layer the spring mix greens and top with blueberries, feta cheese, red onion, cucumber, dried cranberries (optional), and grilled chicken slices.
