Description

This Chinese Chicken Salad is a vibrant and satisfying dish that combines tender shredded chicken, crisp vegetables, and a zesty Asian dressing, all ready in just 15 minutes.


Ingredients

  • 2 cups rotisserie chicken breast, shredded
  • 1 head romaine lettuce, shredded
  • 1 head iceberg lettuce, shredded
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/4 cup thinly-sliced green onions
  • 3 tablespoons cilantro leaves (optional), roughly chopped
  • Asian salad dressing (homemade or store-bought)
  • Crushed red pepper flakes (for garnish)
  • Sesame seeds (for garnish)
  • Slivered almonds (for garnish)
  • Crispy wonton strips (for garnish)

Instructions

  1. In a large mixing bowl, combine the shredded chicken and half of the Asian dressing. Toss well and let marinate for at least 10 minutes.
  2. Add the romaine and iceberg lettuces, red cabbage, carrots, green onions, and cilantro to the bowl with the marinated chicken. Toss until well combined.
  3. Pour the remaining dressing over the salad mixture and toss gently to coat evenly.
  4. Garnish the salad with crushed red pepper flakes, sesame seeds, slivered almonds, and crispy wonton strips before serving immediately.
