  • 16 oz cream cheese (softened)
  • 2 cups heavy cream (room temperature)
  • 1 cup powdered sugar
  • 2/3 cup creamy peanut butter
  • 6 oz semi-sweet chocolate (for ganache)
  • 1/4 cup heavy cream (for ganache)

Instructions

  1. Prepare baking cups or mini springform pans.
  2. Combine graham cracker crumbs and melted butter; press into the cups to form the crust.
  3. Melt the first batch of chocolate in a microwave-safe bowl.
  4. Whisk cream cheese with powdered sugar and vanilla until smooth; mix in heavy cream until thick.
  5. Fold melted chocolate into two-thirds of the mixture; spread on crust.
  6. Mix remaining cheesecake mixture with peanut butter and layer on top of chocolate.
  7. For ganache, melt additional chocolate with heavy cream; pour over cheesecakes.
