  • 3 overripe mashed bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour (regular or gluten-free)
  • 1 cup old-fashioned rolled oats
  • Cinnamon swirl mixture (light brown sugar and cinnamon)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix mashed bananas with melted vegan butter, maple syrup, almond milk, and vanilla extract.
  3. In another bowl, whisk together baking powder, baking soda, cinnamon, salt, flour, and oats. Gradually fold this mixture into the wet ingredients until just combined.
  4. Prepare the cinnamon swirl by mixing melted vegan butter with light brown sugar and cinnamon.
  5. Pour half of the batter into a loaf pan; drizzle half of the swirl mixture over it. Add remaining batter and top with the rest of the swirl mixture; gently swirl together.
  6. Bake for about 45 minutes or until a toothpick comes out clean.
  7. While cooling, prepare the cream cheese glaze by mixing powdered sugar, melted vegan butter, and softened cream cheese until smooth.
