  • 4 tbsp butter (room temperature)
  • 3/4 cup sugar (for cake)
  • 1 egg
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 3 cups fresh or frozen blueberries
  • 1/2 cup sugar (for streusel)
  • 1/3 cup cake flour (for streusel)
  • 1/2 tsp cinnamon
  • 4 tbsp cold butter (cubed)

Instructions

  1. Preheat oven to 375°F and grease a 9×9 baking dish.
  2. In a bowl, whisk together cake flour, baking powder, and salt.
  3. In another bowl, beat butter and sugar until fluffy. Add the egg and vanilla; mix well.
  4. Alternately add dry ingredients and milk to the butter mixture until combined.
  5. Gently fold in blueberries using a rubber spatula.
  6. Spread batter evenly in the prepared pan.
  7. For streusel, mix sugar, flour, cinnamon, and cold butter until crumbly; sprinkle over batter.
  8. Bake for about 35–40 minutes or until a toothpick comes out clean.
  9. Allow to cool before serving.
