  • 1 pound salmon fillets (or fish of choice)
  • ⅓ cup olive oil
  • 1 red bell pepper, sliced
  • 1 serrano or jalapeno pepper, sliced
  • ½ cup chopped cilantro
  • 2 carrots, sliced
  • 6 garlic cloves, halved
  • 1 tablespoon tomato paste
  • 1 tablespoon sweet paprika
  • ½ tablespoon hot paprika
  • 1 teaspoon coarse salt
  • ½ teaspoon cumin
  • ¼ teaspoon turmeric

Instructions

  1. Heat olive oil in a large sauté pan over medium heat; add red bell pepper, serrano pepper, carrots, and garlic. Sauté for 2–3 minutes until slightly softened.
  2. Stir in sweet paprika, hot paprika, salt, cumin, turmeric, and tomato paste; cook for another 2–3 minutes until fragrant.
  3. Add half of the cilantro and about ¾ cup water; cover and simmer for 12–15 minutes until veggies are tender.
  4. Season salmon fillets with salt; place them in the pan ensuring they are coated with sauce. Cover and cook on low flame for 20–25 minutes.
  5. Before serving, garnish with lemon slices and additional cilantro.
