Ingredients
- 1 pound salmon fillets (or fish of choice)
- ⅓ cup olive oil
- 1 red bell pepper, sliced
- 1 serrano or jalapeno pepper, sliced
- ½ cup chopped cilantro
- 2 carrots, sliced
- 6 garlic cloves, halved
- 1 tablespoon tomato paste
- 1 tablespoon sweet paprika
- ½ tablespoon hot paprika
- 1 teaspoon coarse salt
- ½ teaspoon cumin
- ¼ teaspoon turmeric
Instructions
- Heat olive oil in a large sauté pan over medium heat; add red bell pepper, serrano pepper, carrots, and garlic. Sauté for 2–3 minutes until slightly softened.
- Stir in sweet paprika, hot paprika, salt, cumin, turmeric, and tomato paste; cook for another 2–3 minutes until fragrant.
- Add half of the cilantro and about ¾ cup water; cover and simmer for 12–15 minutes until veggies are tender.
- Season salmon fillets with salt; place them in the pan ensuring they are coated with sauce. Cover and cook on low flame for 20–25 minutes.
- Before serving, garnish with lemon slices and additional cilantro.
