  • 2 tablespoons kosher salt
  • ½ teaspoon baking soda
  • ¼ cup duck fat (or olive oil)
  • 1 whole head garlic
  • 1 tablespoon fresh rosemary
  • ¼ teaspoon freshly cracked black pepper
  • Flaky sea salt for finishing

Instructions

  1. Preheat the oven to 450°F and place a large roasting pan inside.
  2. Rinse the potatoes under cold water, then boil in salted water with baking soda for about 25 minutes until fork-tender.
  3. Drain and dry the potatoes in a colander before adding hot duck fat to the preheated roasting pan.
  4. Rough up the potato edges by shaking them gently in the colander, add to the pan with seasoning, and nestle in garlic.
  5. Roast for 55–60 minutes, tossing every 20 minutes until golden brown.
  6. Remove garlic, mash with rosemary and olive oil, then coat the potatoes before returning to the oven for an additional 5 minutes.
