Ingredients

  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups beef broth
  • Corn tortillas
  • Cilantro and diced onion (for garnish)

Instructions

  1. Soak the dried chilies in hot water for 15 minutes. Blend them with onion, garlic, and tomatoes until smooth.
  2. Place the beef in the crock pot, pour the chili mixture over it, then add broth, vinegar, oregano, cumin, bay leaves, salt, and pepper.
  3. Cook on low for 8-10 hours until the beef is tender.
  4. Shred the beef using two forks and mix it with the sauce.
  5. Heat oil in a skillet; dip tortillas in the broth fat layer before frying until crispy.
  6. Fill tortillas with the beef mixture, fold them over, and fry again until crispy.
  7. Serve with additional broth for dipping along with garnishes.
