- ⅓ cup granulated sugar
- ⅓ cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 1½ cup all-purpose flour
- 2 cups finely crushed graham crackers (divided)
- ½ tsp salt
- ¼ tsp baking soda
- ½ tsp baking powder
- 8 oz cream cheese (softened)
- 8 oz butter (softened)
- 2½ cups powdered sugar
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- In a large bowl, cream together butter, granulated sugar, and brown sugar. Add eggs and vanilla; mix until combined.
- In another bowl, combine flour, salt, baking powder, and baking soda. Gradually mix dry ingredients into wet mixture. Fold in 1 cup crushed graham crackers.
- Using a cookie scoop, portion dough and roll in remaining crushed graham crackers. Place on baking sheets and flatten slightly.
- Bake for 8–10 minutes until edges are golden brown. Cool for 5 minutes before transferring to wire racks.
- Once cooled, frost with cream cheese frosting made by mixing softened cream cheese, softened butter, powdered sugar, and vanilla.
