  • ¾ cup butter
  • ⅓ cup granulated sugar
  • ⅓ cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1½ cup all-purpose flour
  • 2 cups finely crushed graham crackers (divided)
  • ½ tsp salt
  • ¼ tsp baking soda
  • ½ tsp baking powder
  • 8 oz cream cheese (softened)
  • 8 oz butter (softened)
  • 2½ cups powdered sugar

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar. Add eggs and vanilla; mix until combined.
  3. In another bowl, combine flour, salt, baking powder, and baking soda. Gradually mix dry ingredients into wet mixture. Fold in 1 cup crushed graham crackers.
  4. Using a cookie scoop, portion dough and roll in remaining crushed graham crackers. Place on baking sheets and flatten slightly.
  5. Bake for 8–10 minutes until edges are golden brown. Cool for 5 minutes before transferring to wire racks.
  6. Once cooled, frost with cream cheese frosting made by mixing softened cream cheese, softened butter, powdered sugar, and vanilla.
