Ingredients
- 2 servings dry instant ramen noodle cakes (or other noodles of choice)
- 1 cup water (or vegetable broth)
- 5–7 tbsp soy sauce
- 1.5 tsp dark soy sauce (optional)
- 2–3 tbsp corn starch
- 1–3 tbsp sugar (or sweetener)
- 2 tbsp rice vinegar (or lemon juice)
- 1/4 tsp ground pepper
- 1/2 tbsp chili garlic sauce
- 1 tbsp sesame oil
- 2 cloves garlic, minced (optional)
Instructions
- To prepare the sauce, mix all ingredients together and set aside.
- Boil water in a large pot, add the noodles, and cook until just chewy (about 2-3 minutes less than package instructions). Drain and set aside.
- In a sauté pan over medium-high heat, add oil and sauté sliced vegetables or tofu until cooked.
- Pour the prepared sauce into the pan with the sautéed ingredients and simmer for about 2-3 minutes.
- Add the cooked noodles to the pan and mix well until evenly coated with sauce.
- Cook for another 3 minutes until the noodles absorb some sauce.
- Serve garnished with sesame seeds and chopped scallions.
