  • 4 boneless skinless chicken breasts or thighs
  • 1.5 pounds baby Yukon Gold or red potatoes
  • 4 cloves garlic
  • ⅓ cup grated Parmesan cheese
  • Olive oil
  • Italian seasoning
  • Smoked paprika
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine Italian seasoning, smoked paprika, salt, pepper, and olive oil. Coat the chicken thoroughly with this mixture.
  3. In another bowl, toss halved potatoes with olive oil, minced garlic, half of the Parmesan, salt, and pepper until well coated.
  4. Arrange chicken on one side of a baking sheet and potatoes on the other. Sprinkle remaining Parmesan over both.
  5. Bake for about 30 minutes or until chicken is cooked through (165°F internal temperature) and potatoes are tender.
  6. Garnish with chopped parsley before serving.
