  • ⅓ cup almond flour
  • ¼ cup fresh parsley (chopped)
  • 2 tsp fresh dill (chopped)
  • 3 cloves garlic (minced)
  • ¼ cup feta cheese (crumbled)
  • ½ tbsp onion powder
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp freshly cracked pepper
  • Zest of 1 lemon
  • 1 tbsp extra virgin olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice of 1 lemon
  • ⅓ cup crumbled feta cheese (for serving)
  • Fresh parsley (chopped, for garnish)
  • Salt to taste (for orzo)

Instructions

  1. In a mixing bowl, combine ground chicken, almond flour, parsley, dill, garlic, feta, onion powder, oregano, cumin, salt, pepper, lemon zest, and olive oil. Mix until just combined.
  2. Form mixture into meatballs (1½ to 2 inches in size). Lightly salt the outside.
  3. Heat olive oil in a skillet over medium heat. Sear meatballs for 3–4 minutes until browned on all sides; cover and cook for an additional 5–6 minutes until thoroughly cooked.
  4. In the same skillet, bring chicken broth to a boil and add orzo. Cook for 8–10 minutes until tender.
  5. Stir in lemon juice and olive oil into the cooked orzo.
  6. Serve plated with meatballs on top of the orzo; garnish with feta and fresh parsley.
