Instructions

  1. Preheat oven to 350°F (180°C) and line an 8-inch x 8-inch brownie pan with parchment paper.
  2. Melt 1/3 cup of chocolate chips with coconut oil in a microwave-safe bowl; let cool slightly.
  3. In a mixing bowl, whisk together oat flour, cocoa powder, sweetener, baking powder, and salt.
  4. In another bowl, combine Greek yogurt, egg, vanilla extract, almond milk, and melted chocolate until smooth.
  5. Gradually fold dry ingredients into wet mixture using a silicone spatula until just combined; avoid overmixing.
  6. Stir in remaining chocolate chips.
  7. Pour batter into prepared pan and bake for 20-23 minutes or until a toothpick comes out clean.
