  • 24 oz salmon (cut into 4 portions)
  • 1 cup 2% milk
  • 1 tbsp cornstarch
  • 2 cups fresh spinach (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup sun-dried tomatoes
  • 1/2 cup fresh grated parmesan cheese
  • Salt and black pepper to taste
  • Olive oil and butter for cooking

Instructions

  1. Preheat a nonstick pan on medium heat.
  2. Cut salmon into four portions and season with salt and pepper.
  3. Add olive oil and butter to the hot pan; cook salmon skin-side down for about 4-5 minutes per side until golden.
  4. In a bowl, whisk together milk and cornstarch until smooth.
  5. Remove salmon from the pan; sauté minced garlic until fragrant, then add the milk mixture and stir until thickened.
  6. Stir in spinach, cherry tomatoes, sun-dried tomatoes, and parmesan cheese; simmer for 3-4 minutes until spinach wilts.
  7. Cook pasta per package instructions; drain and add to the sauce, tossing gently to combine.
