  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons ginger, grated
  • 5 cups carrots, peeled & chopped
  • 4 cups vegetable broth
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried thyme leaves
  • 13.5 oz coconut milk (full fat)
  • Juice of 1/2 lime

Instructions

  1. Select the sauté function on your Instant Pot and heat olive oil. Sauté onion for 5-6 minutes until translucent.
  2. Add garlic and ginger; cook for another 1-2 minutes until fragrant. Turn off sauté mode.
  3. Stir in carrots, vegetable broth, salt, pepper, and thyme. Secure the lid and set to manual high pressure for 5 minutes.
  4. After cooking, let the pot sit for natural pressure release for 10 minutes before releasing any remaining pressure.
  5. Blend the soup until smooth using an immersion blender or carefully transfer to a stand blender.
  6. Stir in coconut milk and lime juice, adjust seasoning if needed, and serve warm.
