- 2 cups shredded low-moisture mozzarella
- 2 tablespoons cream cheese
- 2 eggs
- 1/2 cup almond flour
- 1 teaspoon baking powder
- 1 tablespoon grated parmesan
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 tablespoon parsley
Instructions
- In a microwave-safe bowl, melt together the mozzarella and cream cheese until smooth.
- In another bowl, whisk the eggs; then combine with the melted cheese mixture along with almond flour and baking powder. Mix well.
- Chill the dough in the refrigerator for at least 4 hours to firm up.
- Divide chilled dough into 8 equal balls and flatten between parchment paper using a rolling pin.
- Preheat oven to 350°F (175°C). Bake flattened dough on a parchment-lined baking sheet for 15–17 minutes until golden brown.
- While baking, heat butter and olive oil in a pan; add minced garlic and sauté until fragrant.
- Brush baked flatbreads with garlic butter and sprinkle parmesan before returning them to the oven for one additional minute.
