  • 2 cups shredded low-moisture mozzarella
  • 2 tablespoons cream cheese
  • 2 eggs
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1 tablespoon grated parmesan
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon parsley

Instructions

  1. In a microwave-safe bowl, melt together the mozzarella and cream cheese until smooth.
  2. In another bowl, whisk the eggs; then combine with the melted cheese mixture along with almond flour and baking powder. Mix well.
  3. Chill the dough in the refrigerator for at least 4 hours to firm up.
  4. Divide chilled dough into 8 equal balls and flatten between parchment paper using a rolling pin.
  5. Preheat oven to 350°F (175°C). Bake flattened dough on a parchment-lined baking sheet for 15–17 minutes until golden brown.
  6. While baking, heat butter and olive oil in a pan; add minced garlic and sauté until fragrant.
  7. Brush baked flatbreads with garlic butter and sprinkle parmesan before returning them to the oven for one additional minute.
