Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together butter and sugar until fluffy. Add lemon zest, then eggs one at a time, mixing well.
  3. Combine dry ingredients in a separate bowl, then gradually mix into the wet ingredients until just combined.
  4. Form tablespoon-sized balls of dough, place on baking sheets, and create an indentation in each.
  5. Prepare lemon curd by cooking lemon juice, sugar, and cornstarch in a saucepan; stir until thickened before mixing in egg yolks and cold butter.
