  • 1 lb andouille sausage
  • 1 lb shrimp (peeled and deveined)
  • 1 lb crab meat
  • 1 green bell pepper
  • 2 celery stalks
  • 1 large onion
  • 3 cloves garlic
  • 6 cups chicken or seafood stock

Instructions

  1. In a large pot over medium heat, combine flour and vegetable oil to create a roux. Stir continuously for 20–30 minutes until deep brown.
  2. Add chopped bell pepper, celery, onion, and minced garlic to the roux; cook until softened.
  3. Stir in sliced sausage along with bay leaves, thyme, and Cajun seasoning; cook until slightly browned.
  4. Pour in stock and optional diced tomatoes; bring to boil then reduce heat to simmer for 45 minutes.
  5. Add okra (or filé powder) and simmer for an additional 10 minutes.
  6. Finally, fold in shrimp and crab meat; cook until shrimp is pink and opaque (about 5–7 minutes).
  7. Adjust seasoning with Worcestershire sauce, hot sauce, salt, and pepper; garnish with green onions and parsley before serving over rice.
