- 1 cup dried red kidney beans (soaked overnight)
- 1 tablespoon oil
- 4 vegan sausages (sliced)
- 1 medium onion (diced)
- 2 stalks celery (diced)
- 1 medium green bell pepper (diced)
- 2 tablespoons Cajun seasoning
- 5 cups vegetable stock
- 2 bay leaves
- 2 teaspoons fresh thyme
- 3 cloves garlic (chopped)
- 1 teaspoon apple cider vinegar (optional)
- ½ teaspoon black pepper (or to taste)
- Salt to taste
- 1 cup long white grain rice
Instructions
- Heat oil in a large pot over medium heat. Add sliced vegan sausage and cook until browned.
- Stir in diced onion, celery, and bell pepper; sauté until onions are translucent.
- Add Cajun seasoning, vegetable stock, bay leaves, thyme, and garlic; mix well.
- Drain soaked beans and add to the pot along with black pepper and optional vinegar.
- Cover and simmer on medium heat for 1 to 1½ hours until beans are tender.
- While simmering, cook rice according to package instructions.
- Mash some beans against the pot's side to thicken the stew and simmer for an additional 5 minutes.
