  • 1 cup dried red kidney beans (soaked overnight)
  • 1 tablespoon oil
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 2 tablespoons Cajun seasoning
  • 5 cups vegetable stock
  • 2 bay leaves
  • 2 teaspoons fresh thyme
  • 3 cloves garlic (chopped)
  • 1 teaspoon apple cider vinegar (optional)
  • ½ teaspoon black pepper (or to taste)
  • Salt to taste
  • 1 cup long white grain rice

Instructions

  1. Heat oil in a large pot over medium heat. Add sliced vegan sausage and cook until browned.
  2. Stir in diced onion, celery, and bell pepper; sauté until onions are translucent.
  3. Add Cajun seasoning, vegetable stock, bay leaves, thyme, and garlic; mix well.
  4. Drain soaked beans and add to the pot along with black pepper and optional vinegar.
  5. Cover and simmer on medium heat for 1 to 1½ hours until beans are tender.
  6. While simmering, cook rice according to package instructions.
  7. Mash some beans against the pot's side to thicken the stew and simmer for an additional 5 minutes.
  8. Serve by ladling stew over rice.
