Ingredients

  • 16 oz. rotini pasta
  • 4 bags frozen fire-roasted corn (or 3 cans of corn)
  • 1 cup crumbled Cotija cheese
  • 1/3 cup fresh cilantro
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 tablespoons olive oil
  • Spices: chili powder, garlic powder, cayenne pepper

Instructions

  1. Cook rotini pasta according to package directions until al dente. Drain and toss with olive oil, salt, and pepper. Allow to cool.
  2. In a bowl, mix sour cream, mayonnaise, olive oil, chili powder, garlic powder, cayenne pepper, lime juice and zest. Season with salt and pepper.
  3. In a large bowl, combine cooled pasta, corn, cotija cheese, and cilantro. Pour dressing over the mixture and toss until well coated.
  4. Serve chilled or at room temperature with extra cilantro on top.
