  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 175 g (3/4 cup) softened butter
  • 150 g (3/4 cup) granulated sugar
  • 150 ml (2/3 cup) milk
  • 2 large eggs (lightly beaten)
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 170°C (325°F). Grease and line a loaf tin with parchment paper.
  2. In a bowl, sift together the flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and sugar until light and fluffy (about 3-5 minutes).
  4. Gradually add the beaten eggs while mixing on low speed; incorporate the vanilla extract.
  5. Alternately mix in half of the milk and half of the dry ingredients until just combined; repeat with remaining milk and flour.
  6. Pour the batter into the prepared loaf tin and bake for about 60-65 minutes or until a skewer inserted comes out clean.
  7. Cool in the pan for a few minutes before transferring to a cooling rack to cool completely.
