  • 1/3 cup granulated sugar
  • 1 1/2 teaspoons active dry yeast
  • 1 large egg (beaten)
  • 2 tablespoons unsalted butter (very soft)
  • 3 1/2 cups all-purpose flour (divided)
  • 1/2 teaspoon kosher salt
  • 1 quart peanut or vegetable oil (for frying)
  • 1 cup powdered sugar (for dusting)

Instructions

  1. Warm the water and milk in a microwave-safe bowl until just warm (not over 100°F). Stir in sugar and yeast; let sit for 15 minutes until foamy.
  2. Mix in beaten egg, salt, softened butter, and 2 cups of flour until smooth. Gradually add remaining flour until combined.
  3. Dust a work surface with flour and turn out dough. Fold gently and shape into a round; place in an oiled bowl covered with a towel.
  4. Let rise in a warm area for about 1.5 to 2 hours until doubled in size.
  5. Heat oil in a Dutch oven to about 370°F while rolling out the dough to a rectangle (17×11 inches) about 1/4 inch thick; cut into squares.
  6. Fry beignets in batches until golden brown on both sides (about 1-2 minutes each). Drain on paper towels and dust with powdered sugar before serving.
