Ingredients
- 4 oz cream cheese (softened)
- 2 Tbsp powdered sugar
- 1/3 cup pumpkin puree
- 2 cups graham cracker crumbs
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 2 cups white chocolate chips
- 1–2 tsp coconut oil (optional)
Instructions
- In a mixing bowl, beat softened cream cheese and powdered sugar until smooth.
- Mix in pumpkin puree, 1 cup of graham cracker crumbs, pumpkin pie spice, and cinnamon until combined.
- Stir in remaining graham cracker crumbs; chill mixture for 30 minutes.
- Form tablespoon-sized balls and place on a parchment-lined baking sheet; chill again for 30 minutes.
- Melt white chocolate chips in the microwave; dip each ball into melted chocolate and set on parchment paper.
- Drizzle extra chocolate over the top and chill until set.
