  • 2 cups Heavy Cream
  • 1/2 cup Unsalted Butter
  • 6 cups Sugar (divided)
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Baking Soda
  • 1 1/2 cups Walnuts or Pecans (chopped)

Instructions

  1. Lightly grease a 9×13-inch baking dish.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat, stirring frequently until liquefied (about 20 minutes).
  3. In a large saucepan or Dutch oven, combine the remaining 4 cups of sugar with heavy cream and simmer on low heat.
  4. Once the smaller saucepan’s sugar is melted, pour it into the larger saucepan while stirring continuously.
  5. Increase heat to medium and cook until reaching 244°F (softball stage).
  6. Remove from heat; stir in baking soda until incorporated.
  7. Add unsalted butter and vanilla extract, mixing until smooth.
  8. Allow resting for about 20 minutes before stirring in chopped nuts.
  9. Transfer mixture to greased baking dish and cool for 1-2 hours before cutting into squares.
