- 2 cups Heavy Cream
- 1/2 cup Unsalted Butter
- 6 cups Sugar (divided)
- 1 teaspoon Vanilla Extract
- 1/4 teaspoon Baking Soda
- 1 1/2 cups Walnuts or Pecans (chopped)
Instructions
- Lightly grease a 9×13-inch baking dish.
- In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat, stirring frequently until liquefied (about 20 minutes).
- In a large saucepan or Dutch oven, combine the remaining 4 cups of sugar with heavy cream and simmer on low heat.
- Once the smaller saucepan’s sugar is melted, pour it into the larger saucepan while stirring continuously.
- Increase heat to medium and cook until reaching 244°F (softball stage).
- Remove from heat; stir in baking soda until incorporated.
- Add unsalted butter and vanilla extract, mixing until smooth.
- Allow resting for about 20 minutes before stirring in chopped nuts.
- Transfer mixture to greased baking dish and cool for 1-2 hours before cutting into squares.
