  • 1 ½ cups granulated sugar
  • 1 cup unsalted vegan butter
  • 1 cup dairy-free yogurt
  • 2 tbsp vanilla extract
  • 1 cup ground almonds
  • 2 ½ cups all-purpose flour (or gluten-free alternative)
  • 3 tsp baking powder
  • 1 cup raspberry jam
  • Vegan cream cheese frosting

Instructions

  1. Preheat the oven to 350°F and line two 8-inch cake pans with parchment paper.
  2. In a large bowl, whisk together the granulated sugar, melted vegan butter, dairy-free yogurt, vanilla extract, and almond extract.
  3. Combine the ground almonds, all-purpose flour, baking powder, and sea salt. Gradually mix in the vegan buttermilk until just combined.
  4. Divide batter between prepared pans and bake for 40–42 minutes or until a toothpick comes out clean.
  5. Cool cakes in pans for about 10 minutes before transferring to a cooling rack to cool completely.
  6. Slice each cooled layer in half if desired. Assemble with frosting and raspberry jam between layers, then frost the outside of the cake.
