  • 1/3 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp coriander
  • 1/2 tsp salt
  • 3 green onions (minced)
  • 2 tbsp cilantro (minced)
  • 1 lime (juiced)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese
  • 1618 small flour tortillas
  • 1/2 cup sour cream (for serving)
  • 1 tbsp cilantro (minced) (for garnish)
  • 1/2 lime (juiced) (for garnish)
  • 1/4 tsp garlic powder (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and season chicken breasts with spices and olive oil.
  2. Bake chicken for 20-25 minutes until cooked thoroughly; shred when cool.
  3. Increase oven temperature to 425°F (218°C).
  4. In a large bowl, mix shredded chicken with cream cheese, salsa, spices, green onions, cilantro, lime juice, and cheeses.
  5. Fill each tortilla with the mixture and roll tightly; place seam-side down on a baking sheet.
  6. Bake for 15-20 minutes until golden brown and crispy.
