  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup jelly (grape or strawberry)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients.
  5. Scoop about 2 tablespoons of dough, flatten into discs on the baking sheet, placing half as bases.
  6. Add about 1 teaspoon of jelly in the center of each disc.
  7. Top with another disc of dough and seal edges firmly using a fork if desired.
  8. Bake for about 12-15 minutes or until edges are golden brown.
  9. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
