- 1 sheet puff pastry (thawed)
- 8 oz dairy-free cream cheese (softened)
- 1–2 tbsp light agave nectar
- 1 ½ tsp pure vanilla extract
- 2 cups sliced peaches
- ½ cup fresh blueberries
- 1–2 tsp melted vegan butter
Instructions
- Thaw the puff pastry at room temperature for about 30 minutes. Soften the cream cheese by letting it sit out for 30 minutes.
- Preheat the oven to 400ºF (200ºC) and line a baking sheet with parchment paper.
- Beat the cream cheese with agave nectar and vanilla extract using an electric mixer until smooth.
- Roll out the puff pastry into a rectangle and place it on the prepared baking sheet. Create a border by tracing around the dough with a knife, then prick the center with a fork.
- Brush the border with melted vegan butter and sprinkle with organic sugar.
- Spread the cream cheese mixture evenly within the border, then top with sliced peaches and blueberries.
- Bake for 25-30 minutes or until golden brown. Allow to cool slightly before serving.
