  • 1 sheet puff pastry (thawed)
  • 8 oz dairy-free cream cheese (softened)
  • 12 tbsp light agave nectar
  • 1 ½ tsp pure vanilla extract
  • 2 cups sliced peaches
  • ½ cup fresh blueberries
  • 12 tsp melted vegan butter

Instructions

  1. Thaw the puff pastry at room temperature for about 30 minutes. Soften the cream cheese by letting it sit out for 30 minutes.
  2. Preheat the oven to 400ºF (200ºC) and line a baking sheet with parchment paper.
  3. Beat the cream cheese with agave nectar and vanilla extract using an electric mixer until smooth.
  4. Roll out the puff pastry into a rectangle and place it on the prepared baking sheet. Create a border by tracing around the dough with a knife, then prick the center with a fork.
  5. Brush the border with melted vegan butter and sprinkle with organic sugar.
  6. Spread the cream cheese mixture evenly within the border, then top with sliced peaches and blueberries.
  7. Bake for 25-30 minutes or until golden brown. Allow to cool slightly before serving.
