  • 1 can (28 oz) crushed tomatoes
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 3/4 cup uncooked long-grain white rice
  • 6 cups low-sodium beef broth
  • Freshly grated Parmesan cheese

Instructions

  1. In a large soup pot over medium-high heat, brown the sausage with onions until cooked through.
  2. Add red and green peppers, garlic, and red pepper flakes; sauté until soft.
  3. Stir in crushed tomatoes, diced tomatoes, rice, and beef broth; mix well.
