  • ¾ cup apple cider vinegar
  • 1 ½ teaspoons red pepper flakes (adjust to taste)

Instructions

  1. Peel and core the pineapple; cut it into small chunks.
  2. In a medium saucepan, combine sugar, apple cider vinegar, red pepper flakes, and ground ginger. Stir well and bring to a gentle boil over medium heat.
  3. Add the pineapple chunks to the boiling syrup and reduce heat to low. Simmer for about 10 minutes while stirring occasionally.

  5. Transfer the mixture into sterilized jars, seal tightly, and refrigerate for at least 24 hours before serving.
