  • 8 oz cream cheese, room temperature
  • 8 oz butter, room temperature
  • 1 tablespoon vanilla extract (for frosting)
  • 1/2 teaspoon salt (for frosting)
  • 7 cups powdered sugar

Instructions

  1. Preheat oven to 350°F and grease three 8-inch cake pans.
  2. In a large bowl, mix pumpkin puree, sugar, oil, eggs, and vanilla until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, spices, and salt.
  4. Gradually combine dry ingredients into wet mixture until just mixed.
  5. Pour batter evenly into prepared pans and bake for 25-30 minutes. Cool completely before frosting.
  6. For the salted caramel, melt sugar over medium-low heat until golden brown; stir in butter and cream.
