  • 2 heads cauliflower
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ cup olive oil
  • 1 teaspoon chopped parsley

Instructions

  1. Preheat your oven to 500ºF (260ºC) and adjust the rack to the lower third position.
  2. Remove the green leaves from each cauliflower head and trim the stem. Cut each head in half lengthwise, then slice into 1½-inch thick steaks.
  3. Mix kosher salt, black pepper, garlic powder, and paprika in a small bowl.
  4. Drizzle olive oil over both sides of each steak and sprinkle with the seasoning mixture.
  5. Place on a rimmed baking sheet covered tightly with foil. Bake for 5 minutes, then remove the foil and roast for an additional 10 minutes.
  6. Flip the steaks and roast until golden brown, about another 6-8 minutes.
  7. Serve garnished with chopped parsley.
