  • 4 medium jalapeños
  • 1 tablespoon olive oil
  • 4 ounces cream cheese, room temperature
  • ½ teaspoon garlic salt
  • ¼ teaspoon black pepper
  • ½ teaspoon onion powder
  • 1 cup (113 g) mild cheddar cheese, shredded, divided
  • 6 strips bacon, cooked, divided
  • 4 slices Texas toast, or your bread of choice
  • 4 tablespoons unsalted butter, divided

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. Brush halved jalapeños with olive oil and roast cut side down for about 15 minutes until slightly charred. Cool before chopping.
  3. In a bowl, mix cream cheese with garlic salt, black pepper, and onion powder until smooth.
  4. Fold in chopped jalapeños.
  5. Assemble sandwiches: Butter one side of each slice of bread; spread half the cream cheese mixture on the unbuttered side, layer bacon and cheddar cheese, top with another slice of bread buttered outside.
  6. Grill in a cast iron skillet over medium heat for 3-5 minutes per side until golden brown and crispy.
