- 1 whole chicken (4–5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- Zest and juice of 2 large oranges
- 1 tablespoon honey
- 1 tablespoon soy sauce
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together olive oil, garlic, thyme, rosemary, orange zest, orange juice, honey, soy sauce, salt, and pepper.
- Pat the chicken dry and rub half of the marinade all over it.
- Place quartered onion in a roasting pan; set the chicken on top and pour remaining marinade over it.
- Roast for about 1 hour 15 minutes until the internal temperature reaches 165°F (75°C), basting every 20 minutes.
- Let the chicken rest for 10-15 minutes before carving.
