  • 1 pound lean ground beef
  • 1/4 cup panko bread crumbs
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 large Vidalia onion (diced)
  • 4 ounces sliced white mushrooms
  • 3 cups beef stock
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine ground beef, panko bread crumbs, tomato paste, Worcestershire sauce, and seasonings until well mixed. Shape into four oval patties.
  2. Heat olive oil in a cast iron skillet over medium heat. Cook the patties until browned on both sides, about 2–4 minutes per side. Remove and keep warm.
  3. In the same skillet, sauté onions until translucent, then add mushrooms and cook until softened. Stir in thyme and flour/cornstarch.
  4. Gradually add beef stock while scraping up brown bits from the pan; bring to a boil and thicken the gravy.
  5. Return the patties to the skillet and simmer in gravy until cooked through (5–7 minutes). Serve hot.
