Instructions

  1. Prepare the cream cheese filling by mixing softened cream cheese, granulated sugar, and vanilla extract until smooth. Transfer to a piping bag and refrigerate until firm.
  2. In a bowl, whisk together flour, baking soda, baking powder, and salt. In another bowl, beat softened butter with sugars until fluffy. Add egg and vanilla; mix well. Gradually add dry ingredients until combined.
  3. Scoop dough (about 2 tablespoons) and flatten slightly. Place a teaspoon of cheesecake filling in the center, fold dough around it to seal, and shape into balls.
