- 12 ounces lump crab meat (checked for shells)
- 1/4 cup quality dry sherry
- 1 teaspoon Old Bay seasoning
- 1/2 teaspoon white pepper
- Salt to taste
- Fresh chives (minced)
- Fresh tarragon (chopped)
- Crème fraîche (optional)
- Extra shrimp for garnish
Instructions
- In a Dutch oven, melt butter over medium heat. Add diced onion and celery; cook until softened (about 5 minutes).
- Stir in minced garlic and cook for another minute.
- Sprinkle flour over the mixture, stirring constantly for 2 minutes until golden.
- Gradually whisk in warmed seafood stock and milk, preventing lumps.
- Add tomato paste, bay leaves, and Old Bay seasoning; simmer for 5 minutes.
- Stir in heavy cream; let simmer until slightly thickened (5 minutes).
- Add shrimp; cook until pink (3–4 minutes).
- Gently fold in crab meat and sherry; heat through for a couple of minutes.
- Remove bay leaves, adjust seasonings, and serve hot.
